This is for CANDIED GINGER - I haven't tried it. It came with my food dehydrator, but it might work using the summer sun. I wonder if the first drying could be elimated.

Peel and slice ginger root. Dry in a food dehydrator for 12 hours or until brittle. Rehydrate by soaking in BOILING water for 1 to 2 hrs.

1 cup Rehydrated sliced ginger
1 cup water
½ cup maple syrup

In a saucepan, simmer rehydrated ginger, water and maple syrup until liquid evaporates (aprox. 20 mins). Remove from heat and spread on a greased roll up sheet (comes with rehydrator), making sure pieces do not touch. Dry for about 6 to 10 hours or until pieces become brittle.

Easy! Start with good olive oil, chop ginger fine and add together with salt (if desired). After a minute or two add chopped onions and garlic. As soon as onions are soft add a few favorite herbs, and presto you have a delicious masala. Combine with rice and/or steamed vegies for a satisfying and tasty meal...
